Kovachii is a premium owner farmed coffee designed to capture the quintessential flavour profile of Northern Peru.
Organically cultivated , this coffee utilises a traditional washed process for a cleaner cup profile. Most of the coffee produced in Peru is processed by hand on the producer’s farm, and Kovachii is no different. Cherries are selectively harvested, de-pulped, processed and then carefully dried on patios, drying beds.
Sustainably sourced from smallholder farmers in the region of Cajamarca, where each farmer processes on their farm due to the distance to the nearest towns and coffee stations, which could be upto 8 hours away. They then bring the coffee for evaluation, where samples are tested and tasted of course, a price is then agreed. Finally a dedicated quality control team ensures that Kovachii delivers a sweet, consistent and refined cup.
This works well whatever the brewing medium.
